Ingredients
– 2 large onions, thinly sliced
– 2 tablespoons unsalted butter
– 1 cup beef or chicken broth
– 1 cup shredded Gruyère or Swiss cheese
– 1 cup cubed bread
– 2 tablespoons fresh thyme leaves
– Salt and black pepper to taste
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a large skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 20-25 minutes.
3. Remove the skillet from heat and stir in the broth. Season with salt and pepper to taste.
4. Grease a mini muffin tin and fill each cup with a small amount of the caramelized onion mixture.
5. Top each bite with a sprinkle of shredded cheese and a few cubes of bread.
6. Bake for 10-12 minutes, or until the cheese is melted and bubbly.
7. Remove the bites from the oven and garnish with fresh thyme leaves.
8. Serve warm and enjoy!
Notes
For a richer flavor, use a combination of Gruyère and Parmesan cheese. You can also experiment with different types of bread, such as sourdough or brioche, for the croutons.
