Ingredients
– 4 large yellow onions, thinly sliced
– 2 tablespoons unsalted butter
– 2 tablespoons olive oil
– 4 garlic cloves, minced
– 1/2 cup dry white wine
– 6 cups beef or vegetable broth
– 2 sprigs fresh thyme, plus more for garnish
– 1 bay leaf
– Salt and freshly ground black pepper, to taste
– 8 ounces Gruyère cheese, grated
– 8 slices crusty baguette
Instructions
1. – In a large pot or Dutch oven, melt the butter and olive oil over medium heat.
2. – Add the sliced onions and cook, stirring occasionally, until deeply caramelized, about 30-40 minutes.
3. – Add the garlic and cook for 2 more minutes, until fragrant.
4. – Deglaze the pan with the white wine, scraping up any browned bits from the bottom.
5. – Pour in the broth and add the thyme sprigs and bay leaf. Season with salt and pepper.
6. – Bring the soup to a simmer and let it cook for 15-20 minutes, allowing the flavors to meld.
7. – Preheat the broiler. Ladle the soup into oven-safe bowls and top each with a slice of baguette and a generous amount of grated Gruyère cheese.
8. – Place the bowls on a baking sheet and broil for 2-3 minutes, or until the cheese is melted and bubbly.
9. – Garnish with additional thyme sprigs before serving.
Notes
This French Onion Soup can be made in advance and reheated. The caramelized onions can be made a day or two ahead of time. For a vegetarian version, use vegetable broth instead of beef.
