Ingredients
– 4 large yellow onions, thinly sliced
– 2 tablespoons unsalted butter
– 2 tablespoons olive oil
– 4 cloves garlic, minced
– 1/4 cup dry white wine
– 4 cups beef or chicken broth
– 2 bay leaves
– 2 sprigs fresh thyme
– 1/2 teaspoon dried oregano
– Salt and black pepper, to taste
– 1 baguette, sliced
– 2 cups shredded Gruyère or Swiss cheese
Instructions
1. In a large heavy-bottomed pot or Dutch oven, melt the butter and olive oil over medium heat.
2. Add the sliced onions and cook, stirring occasionally, until they are deeply caramelized and golden-brown, about 30-40 minutes.
3. Stir in the minced garlic and cook for an additional 2-3 minutes until fragrant.
4. Deglaze the pan with the white wine, scraping up any browned bits from the bottom of the pot.
5. Pour in the broth and add the bay leaves, thyme, and oregano. Season with salt and pepper to taste.
6. Bring the soup to a simmer and let it cook for 20-25 minutes, allowing the flavors to meld.
7. Preheat your oven’s broiler.
8. Ladle the hot soup into oven-safe bowls or ramekins. Top each bowl with a slice or two of the baguette and sprinkle generously with the shredded cheese.
9. Place the bowls under the broiler and cook until the cheese is melted, bubbly, and lightly browned, about 2-3 minutes.
10. Serve the French onion soup hot, garnished with additional thyme sprigs if desired.
Notes
For a richer flavor, use a combination of beef and chicken broth. You can also add a splash of Cognac or dry sherry to the soup for an extra depth of flavor.
