Ingredients
– 4 large green tomatoes, sliced 1/4-inch thick
– 1 cup buttermilk
– 1 cup cornmeal
– 1/2 cup all-purpose flour
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– Vegetable oil for frying
Instructions
1. 1. In a shallow bowl, combine the buttermilk and sliced green tomatoes. Let sit for 10 minutes.
2. 2. In a separate shallow bowl, mix together the cornmeal, flour, salt, and pepper.
3. 3. Dredge the buttermilk-soaked tomato slices in the cornmeal mixture, coating both sides.
4. 4. In a large skillet, heat 1/4 inch of vegetable oil over medium-high heat.
5. 5. Fry the coated tomato slices in batches for 2-3 minutes per side, or until golden brown.
6. 6. Drain the fried green tomatoes on a paper towel-lined plate.
7. 7. Serve hot, garnished with fresh parsley and lemon wedges.
Notes
For best results, use firm, unripe green tomatoes. The breading can also be made with panko breadcrumbs for extra crispiness.
