Description

Ful Medames is a classic Egyptian breakfast dish made with creamy fava beans simmered in a rich tahini-based sauce. This simple, yet satisfying recipe brings the bold flavors of the Middle East right to your table.


Ingredients

– 2 (15 oz) cans fava beans, drained and rinsed

– 1/4 cup tahini

– 2 cloves garlic, minced

– 2 tablespoons lemon juice

– 2 tablespoons olive oil

– 1 teaspoon ground cumin

– 1/2 teaspoon ground coriander

– 1/4 teaspoon cayenne pepper

– Salt and pepper to taste

– Chopped parsley for garnish


Instructions

1. In a medium saucepan, combine the drained and rinsed fava beans, tahini, garlic, lemon juice, olive oil, cumin, coriander, and cayenne. Stir to coat the beans evenly.

2. Heat the mixture over medium, stirring occasionally, until warmed through, about 5-7 minutes.

3. Season with salt and pepper to taste.

4. Transfer the Ful Medames to a serving bowl and garnish with chopped parsley.

5. Serve warm, with pita bread, diced tomatoes, and additional lemon wedges on the side.

Notes

– For a creamier texture, you can mash some of the fava beans with a fork or potato masher before adding the other ingredients.

– Adjust the spices to your desired level of heat and flavor.

– This dish can be made with dried fava beans as well. Soak the beans overnight, then cook according to package instructions before proceeding with the recipe.
