Description
Tender and flavorful Garlic Herb Chicken paired with perfectly roasted carrots – a delicious and easy weeknight meal the whole family will love.
Ingredients
– 4 boneless, skinless chicken breasts
– 1 pound carrots, peeled and cut into 1-inch pieces
– 3 tablespoons olive oil, divided
– 4 cloves garlic, minced
– 2 teaspoons dried thyme
– 1 teaspoon dried rosemary
– 1 teaspoon paprika
– Salt and black pepper, to taste
– 2 tablespoons chopped fresh parsley
Instructions
1. Preheat the oven to 400°F.
2. In a large bowl, toss the carrots with 1 tablespoon of olive oil, salt, and black pepper. Spread the carrots on a baking sheet and roast for 20 minutes.
3. In the same bowl, combine the chicken breasts, 2 tablespoons of olive oil, garlic, thyme, rosemary, paprika, salt, and black pepper. Toss to coat the chicken evenly.
4. Remove the carrots from the oven and push them to the sides of the baking sheet. Place the seasoned chicken breasts in the center of the sheet.
5. Return the baking sheet to the oven and roast for an additional 20-25 minutes, or until the chicken is cooked through and the carrots are tender and caramelized.
6. Garnish the Garlic Herb Chicken & Carrot Plate with chopped fresh parsley before serving.
Notes
