Ingredients
– 3 medium sweet potatoes, cut into 1/2-inch thick wedges
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1/2 cup grated Parmesan cheese
– 1 teaspoon dried oregano
– 1/2 teaspoon paprika
– 1/4 teaspoon cayenne pepper (optional)
– Salt and black pepper, to taste
Instructions
1. – Preheat oven to 400°F and line a large baking sheet with parchment paper.
2. – In a large bowl, toss the sweet potato wedges with olive oil, garlic, Parmesan, oregano, paprika, and cayenne (if using). Season with salt and pepper to taste.
3. – Arrange the wedges in a single layer on the prepared baking sheet.
4. – Bake for 20-25 minutes, flipping halfway, until the wedges are tender and crispy.
5. – Serve the garlic Parmesan sweet potato wedges hot, garnished with extra Parmesan and fresh herbs if desired.
Notes
For crispier wedges, you can broil them for 2-3 minutes at the end. Store any leftovers in an airtight container in the refrigerator for up to 4 days.
