Ingredients
– 2 cups all-purpose flour
– 1 teaspoon instant yeast
– 1 teaspoon salt
– 1 cup warm water
– 2 tablespoons olive oil, plus more for brushing
– 3 cloves garlic, minced
– 2 tablespoons fresh rosemary, chopped
Instructions
1. 1. Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin with non-stick cooking spray.
2. 2. In a large bowl, combine the flour, yeast, and salt. Add the warm water and 2 tablespoons of olive oil, and mix until a shaggy dough forms.
3. 3. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
4. 4. Divide the dough into 12 equal pieces and roll each piece into a ball. Place the dough balls into the prepared muffin tin.
5. 5. Brush the tops of the dough balls with a little olive oil, then sprinkle with the minced garlic and chopped rosemary.
6. 6. Bake for 15-18 minutes, until the muffins are golden brown.
7. 7. Remove from the oven and let cool for 5 minutes before serving.
