Ingredients

– 2 pounds russet potatoes, peeled and cut into 1-inch cubes

– 1 cup all-purpose flour

– 2 eggs

– 1/2 cup dry breadcrumbs

– 1 teaspoon salt

– 1/4 teaspoon ground black pepper

– 2 tablespoons butter, melted


Instructions

1. Bring a large pot of salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes.

2. Drain the cooked potatoes and mash them until smooth. Allow to cool slightly.

3. In a large bowl, combine the mashed potatoes, flour, eggs, breadcrumbs, salt, and pepper. Mix until a soft dough forms.

4. Bring a large pot of salted water to a gentle simmer. Using a tablespoon or small ice cream scoop, gently drop the dough into the simmering water, forming small dumplings.

5. Cook the dumplings for 15-20 minutes, or until they float to the surface and are cooked through.

6. Carefully remove the cooked dumplings from the water using a slotted spoon. Transfer to a serving dish and drizzle with the melted butter.

7. Serve the German Potato Dumplings warm, garnished with fresh parsley if desired.
