Ingredients
– 2 tablespoons olive oil
– 1 onion, diced
– 3 carrots, peeled and sliced
– 2 celery stalks, sliced
– 3 garlic cloves, minced
– 4 cups chicken or vegetable broth
– 2 cups chopped kale or spinach
– 1 bay leaf
– 1 teaspoon dried thyme
– 1/2 teaspoon dried oregano
– Salt and pepper to taste
– Chopped parsley for garnish (optional)
Instructions
1. In a large pot, heat the olive oil over medium heat.
2. Add the onion, carrots, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.
3. Add the garlic and sauté for an additional minute, until fragrant.
4. Pour in the broth and add the bay leaf, thyme, and oregano. Bring the mixture to a boil.
5. Reduce the heat to low, cover, and simmer for 15-20 minutes, until the vegetables are tender.
6. Stir in the kale or spinach and cook for an additional 5 minutes, until the greens are wilted.
7. Season with salt and pepper to taste.
8. Ladle the soup into bowls and garnish with chopped parsley, if desired.
