Ingredients
– 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
– 4 cups low-sodium chicken broth
– 2 cups water
– 3 cloves garlic, minced
– 2 tablespoons freshly grated ginger
– 1 onion, diced
– 2 carrots, peeled and sliced
– 2 stalks celery, sliced
– 8 ounces wide egg noodles
– 2 tablespoons chopped fresh parsley
– Salt and pepper to taste
Instructions
1. In a large pot or Dutch oven, bring the chicken broth and water to a boil over high heat.
2. Add the garlic, ginger, onion, carrots, and celery. Reduce heat to medium-low and simmer for 10 minutes.
3. Add the chicken and egg noodles to the pot. Simmer for an additional 10-12 minutes, or until the chicken is cooked through and the noodles are tender.
4. Stir in the chopped parsley and season with salt and pepper to taste.
