This Ginger Lime Pork with Coconut Rice recipe is a quick and flavor-packed Asian-inspired meal that’s perfect for busy weeknights. The tender pork is infused with the bright, tangy flavors of ginger and lime, while the creamy coconut rice provides a delightful base.
Ingredients
– 1 lb pork tenderloin, cut into 1-inch cubes
– 2 tbsp grated fresh ginger
– 2 tbsp lime juice
– 1 tbsp soy sauce
– 1 tsp brown sugar
– 1 cup uncooked jasmine rice
– 1 (13.5 oz) can coconut milk
– 1 cup water
– 1/2 tsp salt
– Chopped cilantro, for garnish
Instructions
1. 1. In a bowl, combine the pork, ginger, lime juice, soy sauce, and brown sugar. Toss to coat the pork and let marinate for 15 minutes.
2. 2. In a medium saucepan, combine the jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, until rice is tender.
3. 3. Heat a large skillet or wok over medium-high heat. Add the marinated pork and cook for 5-7 minutes, stirring occasionally, until pork is cooked through.
4. 4. Fluff the coconut rice with a fork and serve the ginger lime pork over the rice. Garnish with chopped cilantro.
Notes
For a spicier version, you can add a teaspoon of red pepper flakes or sliced Thai chili peppers to the pork marinade. The coconut rice can also be made in an Instant Pot or rice cooker for convenience.
