Ingredients
– 1 box blue velvet cake mix
– 1 (8 oz) package cream cheese, softened
– 2 cups powdered sugar
– 1 teaspoon vanilla extract
– Blue food coloring
– 1 bag white chocolate chips
Instructions
1. Bake the blue velvet cake according to the package instructions. Allow to cool completely.
2. In a large bowl, crumble the cooled cake into fine crumbs.
3. Add the softened cream cheese, powdered sugar, and vanilla extract. Mix until well combined and the mixture holds together.
4. Add blue food coloring, a few drops at a time, until you reach the desired vibrant blue color.
5. Roll the cake mixture into 1-inch balls and place them on a parchment-lined baking sheet.
6. Melt the white chocolate chips in a double boiler or microwave, stirring frequently until smooth.
7. Dip each cake pop into the melted white chocolate, ensuring it’s fully coated. Allow excess to drip off.
8. Place the dipped cake pops back on the baking sheet and refrigerate for at least 30 minutes to set the chocolate.
Notes
For a more pronounced blue color, you can use a gel food coloring instead of liquid. Store the cake pops in an airtight container in the refrigerator for up to 1 week.
