Ingredients
– 4 boneless, skinless chicken breasts
– 4 ounces goat cheese, softened
– 1 tablespoon olive oil
– 2 large onions, thinly sliced
– 2 cloves garlic, minced
– 2 tablespoons balsamic vinegar
– 1 tablespoon brown sugar
– 1 teaspoon fresh thyme, chopped
– Salt and pepper to taste
Instructions
1. Preheat your oven to 400°F (200°C).
2. Use a sharp knife to cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
3. Fill each pocket with about 1 ounce of the softened goat cheese.
4. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for 2-3 minutes per side, until golden brown.
5. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted.
6. While the chicken is baking, in a separate skillet, sauté the onions over medium heat for 10-15 minutes, stirring occasionally, until they are caramelized and golden brown.
7. Stir in the garlic, balsamic vinegar, and brown sugar. Cook for an additional 2-3 minutes, until the sauce has thickened.
8. Remove the chicken from the oven and top with the caramelized onions. Sprinkle with fresh thyme.
