Ingredients
– 3 cups (375g) all-purpose flour
– 1 teaspoon salt
– 1 teaspoon active dry yeast
– 1 1/4 cups (295ml) warm water
– 2 tablespoons (30ml) olive oil, plus more for drizzling
– 1 cup (150g) seedless grapes, halved
– 2 tablespoons (10g) fresh rosemary, chopped
Instructions
1. – In a large bowl, combine the flour, salt, and yeast. Add the warm water and olive oil, and mix until a shaggy dough forms.
2. – Turn the dough out onto a lightly floured surface and knead for about 10 minutes, until smooth and elastic.
3. – Place the dough in a lightly greased bowl, cover, and let rise for 1 hour or until doubled in size.
4. – Punch down the dough to release any air bubbles. Gently stretch and press the dough into a greased 9×13-inch baking pan.
5. – Arrange the halved grapes over the top of the dough and sprinkle with the chopped rosemary.
6. – Drizzle the top with additional olive oil.
7. – Bake at 400°F (200°C) for 25-30 minutes, or until the focaccia is golden brown.
8. – Let cool for 10 minutes before slicing and serving.
Notes
– For a more pronounced rosemary flavor, you can increase the amount of fresh rosemary used.
– Try experimenting with different types of grapes, such as red or green seedless varieties.
– This focaccia can be enjoyed as a snack, appetizer, or alongside soups and salads.
