Description

Grapefruit and Thyme Shortbread is a delightful twist on a classic cookie. The bright, zesty flavors of grapefruit and the aromatic notes of fresh thyme create a delicate and irresistible treat perfect for any occasion.


Ingredients

– 2 cups all-purpose flour

– 1 cup unsalted butter, softened

– 3/4 cup granulated sugar

– 1 tablespoon grapefruit zest

– 1 tablespoon fresh thyme leaves

– 1/4 teaspoon salt


Instructions

1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the all-purpose flour and salt.

3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

4. Add the grapefruit zest and fresh thyme leaves, and mix until well combined.

5. Gradually add the dry ingredients to the butter mixture, mixing until a dough forms.

6. Roll the dough out to about 1/4-inch thickness on a lightly floured surface.

7. Use a 2-inch round cookie cutter to cut out circles from the dough, and place them on the prepared baking sheet, spacing them about 1 inch apart.

8. Bake for 12-15 minutes, or until the cookies are lightly golden around the edges.

9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a more pronounced grapefruit flavor, you can add an extra tablespoon of grapefruit zest. If you prefer a chunkier texture, you can also finely chop the thyme leaves before adding them to the dough.
