Description

Ingredients

– 1 lb ground lamb or beef

– 1/2 cup breadcrumbs

– 1 egg

– 2 garlic cloves, minced

– 1 tsp dried oregano

– 1/2 tsp ground cinnamon

– 1/4 tsp ground allspice

– Salt and pepper to taste

– 1 cup plain Greek yogurt

– 1 cucumber, peeled, seeded, and diced

– 2 tbsp lemon juice

– 1 garlic clove, minced

– 2 tbsp fresh dill, chopped

– Salt and pepper to taste

– 2 cups cooked white or brown rice

– 1 cup cherry tomatoes, halved

– 1/2 red onion, thinly sliced

– 1 cup diced cucumber

– 2 tbsp chopped fresh parsley


Instructions

1. 1. In a large bowl, combine the ground meat, breadcrumbs, egg, garlic, oregano, cinnamon, allspice, salt, and pepper. Mix well until fully incorporated.

2. 2. Roll the mixture into 1-inch meatballs and place them on a baking sheet.

3. 3. Heat a large skillet over medium-high heat. Add the meatballs and cook, turning occasionally, until browned on all sides and cooked through, about 8-10 minutes.

4. 4. In a small bowl, mix together the Greek yogurt, diced cucumber, lemon juice, garlic, dill, salt, and pepper to make the tzatziki sauce.

5. 5. Divide the cooked rice among serving bowls. Top with the cooked meatballs, tomatoes, red onion, diced cucumber, and a generous drizzle of the tzatziki sauce.

6. 6. Garnish with chopped fresh parsley and serve immediately.

Notes

– For a heartier meal, serve the meatballs and veggies over a bed of couscous or quinoa instead of rice.

– Adjust the spices in the meatballs to your taste, adding more or less of the cinnamon and allspice as desired.

– The tzatziki sauce can be made in advance and refrigerated for up to 3 days.
