Ingredients
– 15 oz ricotta cheese
– 4 large eggs
– 1 cup granulated sugar
– 1 lemon, zested
– 1/4 cup honey, plus more for drizzling
Instructions
1. 1. Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish.
2. 2. In a large mixing bowl, combine the ricotta cheese, eggs, sugar, and lemon zest. Mix until well combined.
3. 3. Pour the filling into the prepared pie dish and smooth the top.
4. 4. Bake for 45-55 minutes, or until the center is set and the top is golden brown.
5. 5. Remove the pie from the oven and let it cool completely.
6. 6. Once cooled, drizzle the top of the pie with honey.

Notes
For best results, use full-fat ricotta cheese. You can also add a tablespoon of all-purpose flour to the filling for a slightly firmer texture. Refrigerate any leftover Melopita for up to 3 days.
