Ingredients
– 1 block (14 oz) extra-firm tofu, cut into 1-inch cubes
– 1/4 cup fresh lemon juice
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1 tablespoon dried oregano
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 8 wooden skewers, soaked in water for 30 minutes
Instructions
1. In a large resealable bag or shallow dish, combine the tofu cubes, lemon juice, olive oil, garlic, oregano, salt, and pepper. Toss gently to coat the tofu. Cover and marinate for at least 30 minutes, or up to 2 hours, in the refrigerator.
2. Preheat a grill or grill pan to medium-high heat.
3. Thread the marinated tofu cubes onto the soaked wooden skewers, leaving a small space between each piece.
4. Grill the tofu skewers for 2-3 minutes per side, or until lightly charred and heated through.
5. Serve the Greek-Style Tofu Souvlaki hot, garnished with additional lemon wedges and fresh parsley, if desired. Enjoy with pita bread, a fresh Greek salad, and tzatziki sauce.
Notes
For best results, use extra-firm or super-firm tofu, which will hold its shape better during the grilling process. You can also bake the skewered tofu in the oven at 400°F for 15-20 minutes, flipping halfway, if you prefer not to grill.
