Ingredients

– 2 cups all-purpose flour

– 1/2 cup unsweetened cocoa powder

– 1 teaspoon baking soda

– 1/2 teaspoon salt

– 1/2 cup unsalted butter, softened

– 1 1/2 cups granulated sugar

– 2 large eggs

– 1 teaspoon vanilla extract

– 1 cup buttermilk

– 1-2 tablespoons green food coloring


Instructions

1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.

2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

3. In a large bowl, beat the softened butter and sugar until light and fluffy, about 2-3 minutes.

4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

5. Alternately add the dry ingredients and buttermilk to the butter mixture, mixing just until combined.

6. Gently fold in the food coloring, adding more as needed to achieve your desired green color.

7. Scoop the batter into the prepared muffin cups, filling them about 3/4 full.

8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

9. Allow the cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely before frosting.
