Ingredients
– 4 boneless, skinless chicken breasts
– 2 avocados, diced
– 8 cups mixed greens
– 1 cup cherry tomatoes, halved
– 1/2 red onion, thinly sliced
– 1/4 cup crumbled feta cheese (optional)
– 2 tablespoons olive oil
– 2 tablespoons balsamic vinegar
– 1 tablespoon Dijon mustard
– 1 garlic clove, minced
– Salt and pepper to taste
Instructions
1. – Preheat grill to medium-high heat.
2. – Season the chicken breasts with salt and pepper.
3. – Grill the chicken for 6-8 minutes per side, or until cooked through. Let rest for 5 minutes, then slice or shred the chicken.
