Juicy, flavor-packed Grilled Lemongrass Chicken is a quick and easy weeknight dinner that’s bursting with bright, citrusy notes. Marinated in a fragrant lemongrass mixture, this chicken is grilled to perfection for a delicious and satisfying meal.
Ingredients
– 1 lb boneless, skinless chicken thighs
– 2 stalks lemongrass, tender white part only, minced
– 3 cloves garlic, minced
– 2 tbsp fish sauce
– 2 tbsp brown sugar
– 1 tbsp lime juice
– 1 tsp ground coriander
– 1/2 tsp red pepper flakes (optional)
– Salt and pepper to taste
Instructions
1. 1. In a large resealable bag or bowl, combine the lemongrass, garlic, fish sauce, brown sugar, lime juice, coriander, and red pepper flakes (if using). Season with salt and pepper.
2. 2. Add the chicken and toss to coat evenly. Cover and marinate in the refrigerator for 30 minutes to 1 hour.
3. 3. Preheat grill to medium-high heat.
4. 4. Thread the marinated chicken onto skewers.
5. 5. Grill the chicken skewers for 12-15 minutes, turning occasionally, until cooked through.
6. 6. Serve the grilled lemongrass chicken immediately, garnished with fresh herbs and a lime wedge.
Notes
For best results, marinate the chicken for at least 30 minutes to allow the flavors to infuse. The chicken can also be baked in the oven at 400°F for 18-22 minutes.
