Description
Tender, juicy chicken infused with the bright, tangy flavors of lemongrass, garlic, and lime. This easy Grilled Lemongrass Chicken is a quick and flavorful weeknight dinner option.
Ingredients
– 4 boneless, skinless chicken breasts
– 3 stalks lemongrass, tender white part only, finely chopped
– 3 cloves garlic, minced
– 2 tablespoons freshly squeezed lime juice
– 2 tablespoons fish sauce
– 1 tablespoon brown sugar
– 1 teaspoon ground black pepper
– 2 tablespoons vegetable oil
– Chopped fresh cilantro, for serving
Instructions
1. 1. In a large resealable bag or shallow dish, combine the lemongrass, garlic, lime juice, fish sauce, brown sugar, and black pepper. Add the chicken and turn to coat evenly. Cover or seal and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
2. 2. Preheat a grill or grill pan to medium-high heat. Brush the grill grates or pan with the vegetable oil.
3. 3. Grill the chicken for 5-7 minutes per side, or until cooked through and the internal temperature reaches 165°F.
4. 4. Transfer the grilled chicken to a cutting board and let rest for 5 minutes. Slice or shred the chicken and serve immediately, garnished with fresh cilantro.
Notes
– For extra flavor, you can also grill lemon or lime wedges to serve alongside the chicken.
– Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days and used in salads, wraps, or rice bowls.
