Description
Juicy, tender shrimp marinated in a tangy, buttery piccata-style sauce, then grilled to perfection on skewers for an easy and elegant appetizer or main dish.
Ingredients
– 1 lb large shrimp, peeled and deveined
– 4 tbsp unsalted butter, melted
– 2 tbsp fresh lemon juice
– 2 tbsp capers, drained and rinsed
– 2 cloves garlic, minced
– 1 tsp dried oregano
– 1/4 tsp red pepper flakes (optional)
– Salt and freshly ground black pepper, to taste
– Lemon wedges and chopped parsley, for serving
Instructions
1. 1. In a large bowl, combine the melted butter, lemon juice, capers, garlic, oregano, and red pepper flakes (if using). Season with salt and pepper.
2. 2. Add the shrimp to the butter mixture and toss to coat evenly. Cover and marinate for 15-30 minutes.
3. 3. Preheat grill or grill pan to medium-high heat.
4. 4. Thread the marinated shrimp onto metal or wooden skewers.
5. 5. Grill the shrimp skewers for 2-3 minutes per side, or until the shrimp are opaque and cooked through.
6. 6. Serve the Grilled Shrimp Piccata Skewers immediately, garnished with lemon wedges and chopped parsley.
Notes
For best results, use large, fresh shrimp. You can also broil the shrimp skewers in the oven for 5-7 minutes, flipping halfway through. Adjust the cooking time as needed to ensure the shrimp are cooked through.
