Description

Juicy grilled steak, creamy homemade sauce, and tender grilled zucchini come together in this delightful Grilled Steak Bowl – a quick and easy weeknight meal bursting with flavor and nutrition.


Ingredients

– 1 lb flank steak

– 2 medium zucchini, sliced into 1/2-inch rounds

– 2 tbsp olive oil, divided

– 1 tsp salt, divided

– 1/2 tsp black pepper, divided

– 1/2 cup sour cream

– 1/4 cup mayonnaise

– 2 tbsp lemon juice

– 1 tbsp Dijon mustard

– 1 garlic clove, minced

– 2 tbsp chopped fresh parsley


Instructions

1. – Preheat grill to medium-high heat.

2. – Season the steak with 1/2 tsp salt and 1/4 tsp pepper.

3. – Grill the steak for 4-5 minutes per side, or until it reaches your desired doneness. Transfer to a cutting board and let rest for 5 minutes.

4. – Toss the zucchini slices with 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper.

5. – Grill the zucchini for 2-3 minutes per side, or until lightly charred and tender.

6. – In a small bowl, whisk together the sour cream, mayonnaise, lemon juice, Dijon, garlic, and remaining 1/2 tsp salt and 1/4 tsp pepper.

7. – Slice the steak against the grain and arrange on a serving platter with the grilled zucchini. Drizzle the creamy sauce over the top and garnish with chopped parsley.

Notes

– For a spicier version, add a pinch of cayenne to the sauce.

– Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
