Ingredients
– 4 large eggs
– 4 oz cream cheese, softened
– 1/4 cup coconut flour
– 1/4 cup almond flour
– 1 tsp baking powder
– 2 tbsp granulated sweetener (such as erythritol or monk fruit)
– 1/2 tsp vanilla extract
– 1/4 tsp salt
Instructions
1. In a medium bowl, beat the eggs until light and fluffy.
2. Add the cream cheese and beat until well combined and smooth.
3. In a separate bowl, whisk together the coconut flour, almond flour, baking powder, sweetener, vanilla, and salt.
4. Gently fold the dry ingredients into the wet ingredients until a smooth batter forms.
5. Preheat a waffle iron and grease it lightly. Scoop the batter onto the hot waffle iron and cook for 3-5 minutes, or until golden brown and cooked through.
6. Carefully remove the chaffles from the waffle iron and serve warm, drizzled with a sugar-free glaze or dusted with powdered sweetener, if desired.
Notes
For best results, use room temperature ingredients. The batter can also be used to make pancakes or muffins. Store any leftover chaffles in an airtight container in the refrigerator for up to 5 days.
