Indulge in the rich and comforting flavors of this Guinness & Tallow Beef Stew. Tender beef, a robust Guinness broth, and savory tallow come together to create a dish that’s both deeply satisfying and easy to prepare.
Ingredients
– 2 pounds beef chuck, cut into 1-inch cubes
– 1/4 cup all-purpose flour
– 2 tablespoons tallow
– 1 large onion, diced
– 3 carrots, peeled and sliced
– 3 celery stalks, sliced
– 4 cloves garlic, minced
– 2 cups Guinness or other stout beer
– 2 cups beef broth
– 2 bay leaves
– 1 teaspoon dried thyme
– 1 teaspoon salt
– 1/2 teaspoon black pepper
Instructions
1. Pat the beef cubes dry and toss them with the flour until evenly coated.
2. In a large Dutch oven or heavy-bottomed pot, heat the tallow over medium-high heat. Working in batches, brown the beef on all sides, about 2-3 minutes per batch. Transfer the browned beef to a plate.
3. Reduce the heat to medium and add the onion, carrots, and celery to the pot. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
4. Add the garlic and cook for 1 minute, until fragrant.
5. Pour in the Guinness and beef broth, scraping up any browned bits from the bottom of the pot.
6. Add the bay leaves, thyme, salt, and pepper. Return the browned beef and any accumulated juices to the pot.
7. Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 1 hour, or until the beef is very tender.
8. Remove the bay leaves. Taste and adjust seasoning as needed.
9. Serve the Guinness & Tallow Beef Stew hot, with crusty bread on the side.
Notes
For a richer flavor, you can substitute some of the beef broth with additional Guinness. The tallow can be substituted with olive oil or butter, but the tallow adds a unique depth of flavor. This stew also freezes well for easy meal prep.
