This hearty and comforting Hamburger Soup is a family-friendly meal that’s perfect for chilly nights. Made with ground beef, vegetables, and a rich broth, it’s a delicious and easy-to-make classic.
Ingredients
– 1 lb ground beef
– 1 onion, diced
– 3 carrots, peeled and sliced
– 3 potatoes, peeled and cubed
– 4 cups beef broth
– 1 (6 oz) can tomato paste
– 1 tsp dried thyme
– 1 tsp dried parsley
– Salt and pepper to taste
Instructions
1. 1. In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain excess fat.
2. 2. Add the diced onion and sauté for 2-3 minutes until translucent.
3. 3. Stir in the sliced carrots, cubed potatoes, beef broth, tomato paste, thyme, parsley, salt, and pepper.
4. 4. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, or until the vegetables are tender.
5. 5. Taste and adjust seasoning as needed.
Notes
– For a thicker soup, you can mash some of the potatoes against the side of the pot.
– Garnish with fresh parsley or a sprinkle of shredded cheddar cheese.
