Ingredients
– 2 pounds Yukon Gold potatoes, peeled and diced
– 1 onion, diced
– 6 cloves garlic, minced
– 4 cups vegetable or chicken broth
– 1 cup milk
– 2 tablespoons olive oil
– 1 teaspoon dried thyme
– 1 teaspoon dried parsley
– Salt and pepper to taste
Instructions
1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté for 3-5 minutes until fragrant and translucent.
2. Add the diced potatoes and vegetable or chicken broth to the pot. Bring the mixture to a boil, then reduce heat and let simmer for 15-20 minutes, or until the potatoes are tender.
3. Using an immersion blender, carefully blend the soup until smooth and creamy. Alternatively, you can transfer the soup to a blender and blend in batches.
4. Stir in the milk, dried thyme, and dried parsley. Season with salt and pepper to taste.
5. Serve the Hangover Cure Garlic Potato Soup warm, garnished with additional herbs, a swirl of sour cream or yogurt, and crispy croutons.
Notes
– For a thicker soup, you can add an extra 1/2 cup of milk or let the soup simmer for a few extra minutes.
