Description

Ingredients

– 3 lbs russet potatoes, peeled and shredded

– 1 onion, grated

– 2 eggs, lightly beaten

– 1/4 cup all-purpose flour

– 1 tsp baking powder

– 1 tsp salt

– 1/4 tsp black pepper

– Vegetable oil for frying


Instructions

1. 1. Squeeze as much liquid as possible from the shredded potatoes. Transfer to a large bowl.

2. 2. Add the grated onion, eggs, flour, baking powder, salt, and pepper. Mix well to combine.

3. 3. In a large skillet, heat 1/4 inch of vegetable oil over medium-high heat.

4. 4. Scoop heaping tablespoons of the potato mixture and flatten them slightly. Carefully add to the hot oil and fry for 2-3 minutes per side, until golden brown.

5. 5. Transfer the fried latkes to a paper towel-lined plate to drain excess oil. Serve hot with sour cream, applesauce, or your desired toppings.

Notes

For extra crispy latkes, you can rinse the shredded potatoes in cold water and pat them very dry before mixing with the other ingredients. Adjust the amount of oil as needed to maintain the ideal frying temperature.
