This healthy chicken noodle soup is a comforting classic made easy. With tender chicken, fresh vegetables, and hearty noodles, it’s the ultimate cozy meal that’s good for you.
Ingredients
– 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
– 2 tbsp olive oil
– 1 onion, diced
– 3 carrots, peeled and sliced
– 3 celery stalks, sliced
– 4 cloves garlic, minced
– 8 cups low-sodium chicken broth
– 2 bay leaves
– 1 tsp dried thyme
– 1 tsp dried parsley
– 8 oz egg noodles
– Salt and pepper to taste
Instructions
1. – In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté for 5-7 minutes until softened.
2. – Add the garlic and sauté for 1 minute until fragrant.
3. – Pour in the chicken broth and add the bay leaves, thyme, and parsley. Bring to a boil.
4. – Add the chicken and egg noodles, and simmer for 10-12 minutes, or until the chicken is cooked through and the noodles are tender.
5. – Season with salt and pepper to taste.
6. – Remove the bay leaves before serving.
Notes
For extra flavor, use bone-in, skin-on chicken thighs instead of breasts. You can also add a parmesan rind to the broth while simmering. Garnish with fresh parsley or thyme.
