Ingredients
– 12 large eggs
– 1/4 cup mayonnaise
– 1 teaspoon Dijon mustard
– 1/4 teaspoon paprika, plus more for garnish
– 1 tablespoon freshly chopped dill, plus more for garnish
– Salt and pepper to taste
Instructions
1. – Place the eggs in a single layer in a large saucepan and cover with cold water by 1 inch. Bring to a boil over high heat.
2. – Once the water reaches a boil, remove from heat, cover, and let sit for 12 minutes.
3. – Drain the eggs and let cool completely, about 15 minutes.
4. – Peel the eggs and cut them in half lengthwise.
5. – Carefully scoop out the yolks and place them in a medium bowl.
6. – Add the mayonnaise, Dijon mustard, paprika, and dill to the yolks. Mash and mix until smooth and creamy.
7. – Spoon or pipe the yolk mixture back into the egg white halves.
8. – Sprinkle the tops with additional paprika and dill.
9. – Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Notes
– For extra flavor, you can add a touch of lemon juice or hot sauce to the yolk mixture.
– Garnish with chopped chives, bacon bits, or a sprinkle of smoked paprika for variation.
