Ingredients
– 1 medium spaghetti squash, halved and seeded
– 2 cups shredded low-fat cheese (such as cheddar or Gruyère)
– 1 cup low-fat milk
– 2 tablespoons all-purpose flour
– 1 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/4 teaspoon ground nutmeg
– Salt and black pepper to taste
– 1/2 cup panko breadcrumbs
– 2 tablespoons grated Parmesan cheese
Instructions
1. 1. Preheat the oven to 400°F. Place the spaghetti squash halves cut-side down on a baking sheet and roast for 30-40 minutes, until tender.
2. 2. Using a fork, shred the spaghetti squash strands into a large bowl.
3. 3. In a small saucepan, whisk together the milk and flour over medium heat. Cook, stirring constantly, until the mixture thickens, about 5 minutes.
4. 4. Remove the sauce from heat and stir in the shredded cheese, garlic powder, onion powder, nutmeg, salt, and pepper.
