Description

Healthy Sweet Potato Hash Browns are a delicious and nutritious twist on classic hash browns. Made with grated sweet potatoes, eggs, and a touch of flour, these crispy hash browns are packed with fiber, vitamins, and natural sweetness. Perfect for a quick and easy weeknight meal or a satisfying weekend brunch.

Ingredients

– 3 medium sweet potatoes, peeled and grated

– 2 eggs, beaten

– 2 tablespoons all-purpose flour

– 1 teaspoon salt

– 1/4 teaspoon black pepper

– 2 tablespoons olive oil or avocado oil for cooking

Instructions

1. 1. In a large bowl, combine the grated sweet potatoes, beaten eggs, flour, salt, and pepper. Mix well until all the ingredients are evenly distributed.

2. 2. Heat the oil in a large skillet over medium-high heat.

3. 3. Scoop heaping 1/4 cup portions of the sweet potato mixture and flatten them into patties.

4. 4. Cook the hash browns in batches for 2-3 minutes per side, or until golden brown and crispy.

5. 5. Drain the cooked hash browns on a paper towel-lined plate and serve hot, garnished with fresh parsley if desired.

Notes

– For extra crispy hash browns, be sure to squeeze out any excess moisture from the grated sweet potatoes before mixing with the other ingredients.

– Experiment with different seasonings, such as garlic powder, paprika, or cayenne pepper, to customize the flavor.

– These hash browns can be made in advance and reheated in the oven or air fryer for a quick and easy meal.
