Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 2 cans (15 oz each) white beans, drained and rinsed
– 1 onion, diced
– 3 cloves garlic, minced
– 2 tsp ground cumin
– 1 tsp dried oregano
– 1 tsp chili powder
– 1/2 tsp ground coriander
– 1/4 tsp cayenne pepper (optional, for heat)
– 4 cups low-sodium chicken broth
– Salt and black pepper to taste
– Chopped fresh cilantro for garnish
Instructions
1. – In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat.
2. – Add the diced onion and sauté for 3-4 minutes until softened.
3. – Stir in the minced garlic and sauté for an additional minute.
4. – Add the cubed chicken and sear on all sides, about 5 minutes.
5. – Sprinkle in the cumin, oregano, chili powder, coriander, and cayenne (if using). Stir to coat the chicken.
6. – Pour in the chicken broth and add the drained and rinsed white beans.
7. – Bring the mixture to a boil, then reduce heat and let simmer for 15-20 minutes, until the chicken is cooked through and the flavors have melded.
8. – Season with salt and black pepper to taste.
9. – Serve hot, garnished with fresh chopped cilantro.
Notes
– For extra creaminess, you can blend or mash some of the white beans before adding them to the chili.
