Ingredients
– 4 boneless, skinless chicken breasts
– 1 cup ricotta cheese
– 1/4 cup chopped fresh parsley
– 2 tablespoons chopped fresh basil
– 1 garlic clove, minced
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Preheat oven to 375°F.
2. In a medium bowl, mix together the ricotta, parsley, basil, garlic, salt, and pepper until well combined.
3. Slice the chicken breasts horizontally to create a pocket, being careful not to cut all the way through.
4. Spoon the ricotta mixture evenly into the pockets of the chicken breasts.
5. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the filling is hot.
6. Let the chicken rest for 5 minutes before serving.
Notes
