Ingredients
– 8 oz whole wheat pasta, cooked al dente
– 2 cups grilled or rotisserie chicken, diced
– 1 red bell pepper, diced
– 1 cup cherry tomatoes, halved
– 1/2 red onion, thinly sliced
– 1/2 cup shredded carrots
– 1/4 cup chopped fresh parsley
– 1/2 cup barbecue sauce
– 2 tbsp olive oil
– 1 tbsp red wine vinegar
– Salt and pepper to taste
Instructions
1. – Cook the pasta according to package instructions. Drain and rinse with cold water.
