Description

This Hobo Casserole is a comforting and flavorful one-dish meal that’s perfect for busy weeknights. Featuring tender ground beef, sautéed vegetables, and a creamy sauce, it’s a family-friendly favorite that’s sure to become a new regular in your dinner rotation.


Ingredients

– 1 pound ground beef

– 1 onion, diced

– 2 carrots, peeled and diced

– 2 potatoes, peeled and diced

– 1 can (10.5 oz) cream of mushroom soup

– 1 cup shredded cheddar cheese

– Salt and pepper to taste


Instructions

1. Preheat the oven to 375°F.

2. In a large skillet, cook the ground beef over medium heat until browned and crumbled, 5-7 minutes. Drain any excess fat.

3. Add the diced onion, carrots, and potatoes to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are slightly softened.

4. Stir in the cream of mushroom soup and season with salt and pepper to taste.

5. Transfer the mixture to a 9×13 baking dish and top with the shredded cheddar cheese.

6. Bake for 20-25 minutes, or until the casserole is bubbly and the cheese is melted and golden brown.

7. Serve hot and enjoy!

Notes

This Hobo Casserole can be made ahead of time and refrigerated until ready to bake. It’s also a great way to use up any leftover vegetables you have on hand.
