Ingredients
– 8 cloves garlic, minced
– 1 onion, diced
– 4 cups vegetable or chicken broth
– 2 bay leaves
– 1 teaspoon dried thyme
– 1/2 teaspoon black pepper
– 1/4 cup grated Parmesan cheese
– 4 slices crusty bread
Instructions
1. In a large saucepan, sauté the minced garlic and diced onion in a little olive oil over medium heat until softened and fragrant, about 5 minutes.
2. Add the broth, bay leaves, thyme, and black pepper. Bring to a simmer and let the soup cook for 10 minutes.
