Ingredients

– 2 cups all-purpose flour

– 1 tablespoon baking powder

– 1 teaspoon salt

– 2 tablespoons granulated sugar

– 1 cup milk

– 2 eggs

– 4 tablespoons unsalted butter, melted

– 8 ounces breakfast sausage, cooked and crumbled

– 8 slices cheddar cheese


Instructions

1. Preheat the oven to 400°F. Grease a 12-cup muffin tin.

2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.

3. In a separate bowl, whisk together the milk, eggs, and melted butter.

4. Gently fold the wet ingredients into the dry ingredients just until combined.

5. Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

6. Top each muffin with a tablespoon of cooked sausage and a slice of cheddar cheese.

7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

8. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack.

Notes

For best results, use quality breakfast sausage. You can also experiment with different cheese varieties. These muffins can be made ahead and reheated before serving.
