Homemade merguez sausages are a flavorful North African specialty, and when paired with a vibrant herby yogurt sauce, they make for an absolutely delicious and satisfying meal. This quick and easy recipe comes together in just 30 minutes, making it the perfect weeknight dinner.
Ingredients
– 1 lb ground lamb
– 2 tsp paprika
– 1 tsp cumin
– 1 tsp caraway seeds
– 1 tsp harissa paste
– 1 tsp salt
– 1/2 tsp black pepper
– 1 cup plain Greek yogurt
– 1/4 cup chopped fresh parsley
– 2 tbsp chopped fresh mint
– 1 tbsp lemon juice
– 1 garlic clove, minced
– 1/4 tsp salt
Instructions
1. – In a large bowl, combine the ground lamb, paprika, cumin, caraway seeds, harissa paste, salt, and black pepper. Mix until well combined.
2. – Form the seasoned lamb mixture into 8 sausage patties, each about 4 inches long and 1/2 inch thick.
3. – Heat a large skillet over medium-high heat. Add the sausage patties and cook for 3-4 minutes per side, or until cooked through.
4. – In a small bowl, mix together the Greek yogurt, parsley, mint, lemon juice, garlic, and salt.
5. – Serve the homemade merguez sausages warm, topped with the herby yogurt sauce. Enjoy!
Notes
For extra flavor, try grilling the sausages instead of cooking them in a skillet. You can also adjust the spice level by adding more or less harissa paste to the sausage mixture.
