– 3 carrots, peeled and sliced

– 2 bay leaves

– 1 teaspoon dried thyme

– 1 teaspoon dried rosemary

– Salt and black pepper to taste

– Fresh parsley, for garnish


Instructions

1. 1. In a large pot or Dutch oven, heat the olive oil over medium heat.

2. 2. Add the diced onion, sliced carrots, and sliced celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.

4. 4. Pour in the broth and add the bay leaves, dried thyme, and dried rosemary. Season with salt and black pepper to taste.
