Description

Honey Butter Cornbread Poppers are a delightful and easy-to-make appetizer that are sure to be a hit at any gathering. These bite-sized cornbread bites have a perfect balance of sweet and savory flavors, thanks to the addition of honey and butter.


Ingredients

– 1 cup cornmeal

– 1 cup all-purpose flour

– 1/4 cup granulated sugar

– 2 teaspoons baking powder

– 1/2 teaspoon salt

– 1/2 cup unsalted butter, melted

– 1/2 cup honey

– 2 large eggs


Instructions

1. Preheat your oven to 400°F (200°C). Grease a 24-cup mini muffin tin with non-stick cooking spray or butter.

2. In a large bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, and salt.

3. In a separate bowl, whisk together the melted butter, honey, and eggs until well combined.

4. Pour the wet ingredients into the dry ingredients and stir just until everything is combined. Be careful not to overmix.

5. Scoop the batter into the prepared mini muffin tin, filling each cup about 3/4 full.

6. Bake for 12-15 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

7. Allow the cornbread poppers to cool in the tin for 5 minutes before transferring them to a wire rack.

8. Serve the honey butter cornbread poppers warm, with extra honey for drizzling or dipping if desired.

Notes

These cornbread poppers can be made ahead of time and reheated before serving. Store any leftover poppers in an airtight container at room temperature for up to 3 days.
