Ingredients
– 2 medium acorn squash, halved and seeds removed
– 3 tablespoons honey
– 2 tablespoons olive oil
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 4 ounces creamy goat cheese, crumbled
– 1/4 cup cranberry sauce
Instructions
1. 1. Preheat the oven to 400°F (200°C).
2. 2. Place the acorn squash halves cut-side up on a baking sheet. Drizzle with honey and olive oil, and season with salt and pepper.
3. 3. Roast the squash for 30-35 minutes, or until tender and caramelized.
4. 4. Remove the squash from the oven and top each half with crumbled goat cheese.
5. 5. Drizzle the cranberry sauce over the top of the squash.
