Ingredients
– 1 pound heirloom carrots, peeled and cut into 1-inch pieces
– 2 tablespoons olive oil
– 1/4 cup honey
– 2 tablespoons yuzu juice
– 2 cloves garlic, minced
– 1 teaspoon grated ginger
– 1/4 teaspoon ground cumin
– 1/4 teaspoon ground coriander
– Salt and pepper to taste
– Chopped fresh parsley for garnish
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a large bowl, toss the heirloom carrot pieces with the olive oil, salt, and pepper until evenly coated.
3. Arrange the carrots in a single layer on a baking sheet lined with parchment paper.
4. Roast the carrots in the preheated oven for 15-20 minutes, or until they are tender and starting to caramelize.
5. In a small saucepan, combine the honey, yuzu juice, garlic, ginger, cumin, and coriander. Heat over medium, stirring occasionally, until the mixture is fragrant and slightly thickened, about 5 minutes.

7. Return the glazed carrots to the oven and roast for an additional 5-7 minutes, or until the glaze is thickened and the carrots are fully tender.
