Ingredients

– 1 pound carrots, peeled and sliced into 1/4-inch thick coins

– 1 cup apple cider vinegar

– 1/4 cup honey

– 2 tablespoons water

– 1 teaspoon red pepper flakes

– 1 teaspoon Dijon mustard

– 1/2 teaspoon kosher salt


Instructions

1. In a medium saucepan, combine the vinegar, honey, water, red pepper flakes, and Dijon mustard. Bring the mixture to a simmer over medium heat, stirring occasionally, until the honey has fully dissolved.

2. Add the sliced carrots to the saucepan and stir to coat them in the pickling liquid. Reduce the heat to low and let the carrots simmer for 10-15 minutes, or until they are crisp-tender.

3. Remove the saucepan from the heat and let the carrots cool in the pickling liquid for at least 30 minutes, or up to 2 hours in the refrigerator.

4. Using a slotted spoon, transfer the pickled carrots to a serving dish. Drizzle any remaining pickling liquid over the top.

5. Serve the Hot Honey Pickled Carrots immediately, or store them in an airtight container in the refrigerator for up to 1 week.

Notes
