Instant pot Poached salmon fillets is one of the simple and easiest ways to cook salmon. I love it because it’s a great way to make the most of clean and unadulterated fish.

Ingredients

  • 3 tablespoons butter
  • 2 pounds salmon fillets
  • 1 cup chicken broth
  • 1 cup  of chopped scallions
  • 2 cloves garlic
  • Juice of 1 lime
  • 1 tablespoon fresh tarragon
  • Kosher salt
  • ground black pepper.

If the salmon poached correctly, the integrity of the fish is not lost and you end up with the delicious piece of fish that tastes great simply seasoned with a bit of lemon and a bit of cold-pressed olive oil dressing and accompanied also watercress mayonnaise and boiled potatoes.
