Short-grain rice: refers to rice varieties with almost round grains that are soft and cling together when cooked. Sushi rice considers as short-grain rice. The term can be confusing because in Italy and Spain, the kinds of rice used for risotto and paella called short-grain although they are technically medium-grain. Also used in soups and puddings.

HOW TO COOK Instant Pot SUSHI RICE?

  • In a mesh strainer, rinse the rice underwater well for 3 min and rubbing it around in the strainer to remove excess starch.
  • In the instant pot, add rice and water and mix them to combine the “medley”. Close and lock the lid of the pot.
  • Set the instant pot on the Pressure Cook function and set to high for 7 minutes. Once cooking time is up, release the pressure naturally for 10 min. In case of exist remaining pressure, release it slowly using the valve.
  • In a small bowl, combine the rice wine vinegar, sugar and salt.
  • Mix the medley well with rice in a glass dish and let cool in the fridge about 30 min. The rice now is ready to be used to make sushi.
