Salmon with caramel, also known as Vietnamese salmon, make a delicious weeknight meal. It’s quickly cooked with the instant pot and served with rice, fries, or over your favorite bed of delicate vegetables.

One of my favorite ways to cook the salmon is searing in a tangy lime and ginger caramel with some Asian sauce. Usually, I make this in an oven. But when I tried to cook it in my instant pot, I found it very quickly and beautiful with wonderfully tender. The thick center-cut fillets are the best cuts who cook beautifully in the instant pot.
