Description

Experience the ultimate comfort food with this delightful Irish Cheese Toastie. Layers of melted, creamy Irish cheddar cheese are sandwiched between slices of golden-brown Irish soda bread for a mouthwatering grilled sandwich that’s ready in just 10 minutes.


Ingredients

– 4 slices Irish soda bread

– 8 ounces Irish cheddar cheese, sliced

– 2 tablespoons unsalted butter

– 2 tablespoons fresh parsley, chopped


Instructions

1. Preheat a non-stick skillet or griddle over medium heat.

2. Butter the outside of each slice of Irish soda bread.

3. Place 2 slices of bread, buttered-side down, in the preheated skillet.

4. Layer the slices of Irish cheddar cheese on top of the bread.

5. Top with the remaining 2 slices of bread, buttered-side up.

6. Cook for 3-4 minutes per side, or until the bread is golden-brown and the cheese is melted and oozing.

7. Remove from heat and sprinkle with chopped fresh parsley.

8. Serve hot and enjoy!

Notes

For extra flavor, try adding a spread of Irish butter to the bread before assembling the toastie. You can also experiment with different Irish cheese varieties, such as Dubliner or Cashel Blue.
